Each skewer is threaded with fresh blueberries and watermelon stars cut with a star cookie cutter, stacked three stars high with clusters of blueberries between each one. They’re an easy 4th of July and Memorial Day recipe made from one large watermelon and a 16-ounce package of blueberries, and they work just as well laid flat on a platter as they do standing upright in a bucket filled with marbles. For a red, white, and blue version, lace mini marshmallows between the blueberries.
With a cookie cutter, cut the watermelon into 1-inch thick slices first, then press a 3-inch star cutter through each slice for clean, sturdy stars that hold their shape on the skewer. Watermelon stars are firmer than they look once they’re cut from a thick slice, which means they travel well to a cookout and hold up on the skewer for several hours without going soft. - Sharp chef's knife

- 3" star cookie cutter
- 8 bamboo skewers
- Tin can or bucket filled with marbles (for upright display) or a large flat platter
Ingredients
- 1 large watermelon
- 1 (16 oz.) package fresh blueberries
- Optional: mini marshmallows
Instructions
- Cut the watermelon into 1-inch thick round slices, removing the rind.
- Using a 3-inch star cookie cutter, press firmly through each watermelon slice to cut out star shapes. You will need 3 watermelon stars per kabob, so cut at least 24 stars total. Reserve any remaining watermelon for snacking or another use.
- To assemble each kabob, thread 4 to 6 blueberries onto the bottom of a bamboo skewer. Slide a watermelon star down over the blueberries. Repeat — threading another cluster of 4 to 6 blueberries, followed by another watermelon star — until each skewer has 3 watermelon stars with blueberry clusters between each one. Finish with a watermelon star on top.
- If making red, white, and blue kabobs, lace 2 to 3 mini marshmallows between the blueberry clusters on each skewer before adding the next watermelon star.
- Refrigerate the finished kabobs on a flat tray until ready to serve. To display upright, push the bottom of each skewer into a tin can or bucket filled with marbles to secure them in place. Alternatively, arrange flat on a large platter.

Tips and Tricks
- Cut the watermelon slices a full inch thick. A firm, even press straight down through the slice gives you the cleanest cut.
- Can these be made ahead? Yes, assemble the kabobs up to 4 hours in advance and refrigerate on a flat tray covered loosely with plastic wrap. The watermelon holds its shape and color well and the blueberries stay firm.
