Fluffy Mickey Waffles
Makes about 8 Mickey waffles
Ingredients:
- 1 ¾ cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- ¼ teaspoon salt
- 1 ¾ cups milk
- 2 eggs, separated
- 2 tablespoons vegetable oil
Instructions:
- Mix batter – Combine flour, sugar, baking powder, and salt in a large bowl. Whisk milk, egg yolks, and oil in a medium bowl. Whisk milk mixture into dry ingredients until dry ingredients are moistened. Do not overmix.
2. Whisk egg whites – Using a stand mixer fitted with a whisk attachment, beat egg whites on medium-high speed until stiff. Fold egg whites into batter.
3. Bake waffles – Preheat waffle maker. Pour ½ cup of batter into a Mickey waffle iron. Spread carefully. Close the top of the waffle maker and bake until golden, about 3 minutes. Serve with maple syrup, whipped cream, and fresh fruit.
