What’s better than a marshallow Mickey ghost nestled atop fluffy strawberry frosting?! These luscious Mickey Ghost cupcakes topped with Peep Mickey Ghosts and not only delicious but adorable. This recipe was featured on our Mickey Ghost Halloween party.

Makes 12 Cupcakes
Ingredients
- 12 vanilla Cupcakes {use your favorite mix or recipe}
- 1 cup (2 sticks) unsalted butter, softened to room temperature
- 16 oz. confectioner’s sugar
- 1 teaspoon strawberry extract
- 1-2 tablespoons milk or cream
- Pink gel coloring
- 12 Ghost Peeps
- Black writing gel

Instructions
- Make frosting – Cream butter in the bowl of a stand mixer fitted with a paddle attachment or in a medium bowl using a hand mixer. When light and fluffy, add confectioner’s sugar bit by bit until fully combined. Add strawberry extract. Add 1 tablespoon cream or milk. If it seems too thick, you may add another tablespoon of milk or cream. If it seems runny, you may add more confectioner’s sugar. Add a scant bit of pink gel coloring and combine thoroughly.
2. Frost cupcakes – Fit a pastry bag with a coupler and a large star tip and fill with strawberry frosting. Top cupcakes with strawberry frosting and create a point at the top.
3. Decorate cupcakes – Using a kitchen scissors, snip the arms off of the Peep ghosts. Gently scratch off the frosting eyes and mouth. Cut two small slits in the top of each ghost and slide black candy melts into the openings for Mickey’s ears. Using a black writing gel pen add Mickey’s features. If desired, print our Mickey Ghost cupcake wrappers. Cut out, wrap around each cupcake, and tape or glue to secure.
