Arepas are a staple in Colombia and throughout South America. They are eaten morning, noon and evening for a very good reason – they are delicious and very simple to make! These arepas con queso are bite size and are topped with queso fresco and mango salsa. They take only a few ingredients and minutes to make. These were featured on our Encanto Disney dinner.
Mickey Arepas con Queso
Ingredients
- 1 cup masarepa
- 1 teaspoons salt
- 1 teaspoons sugar
- 1 tablespoons unsalted butter, at room temperature
- 1 cup shredded mozzarella cheese
- 2 tablespoons whole milk
- 1 1/4 cups lukewarm water
- Oil for skillet
Instructions
- In a large bowl, combine the masarepa, salt, and sugar. Add the butter and mozzarella. Then slowly drizzle in the milk and water as you knead the dough with your hands. Let the dough rest uncovered for about 5 minutes.
2. Scoop balls of dough onto a piece of waxed paper using a muffin scoop. Wet hands to smooth balls. If you’re making Mickey shaped arepas, make two half-sized balls for ears and gently attach. Flatten the balls of dough with your hands into round patties that are around 1/2 inch thick.
3. Warm a nonstick skillet over medium heat and add a tablespoon of cooking oil. Cook the arepas in batches for about 3 minutes on each side until golden brown. The arepas should be crispy on the outside and soft on the inside. Serve immediately with your choice of toppings. We enjoy mango salsa, pico de gallo, and queso fresco.
