This creamy and rich chocolate mousse gets a dose of magic when served in a cauldron and topped with rich purple buttercream, pearls, and stars. This recipe was featured on our Disney Villains Halloween party.
Ursula's Magical Chocolate Mousse
Makes 4 servings
Ingredients:
- ¾ cups cold heavy cream, divided
½ cup good-quality chocolate chips or coarsely chopped chocolate (6 ounces)
½ cup (1 stick) butter, unsalted
½ teaspoon vanilla extract
Pinch of salt
1 tablespoon whipping cream
2 cups confectioner’s sugar
Purple food coloring
White sugar pearls
Mini plastic cauldrons for serving
Instructions:
- Prepare mousse ingredients – In a medium saucepan over medium-low heat, warm ¼ cup of cream. When steaming but not boiling, add ½ cup chocolate chips and stir to combine. Remove from heat and set aside to allow chocolate to melt. When melted, whisk the chocolate and cream until smooth and fully combined. Set aside.
2. Combine mousse – In a stand mixer fitted with a whisk attachment, beat remaining cream until soft peaks form. Using a large spatula, fold the whipped cream into the chocolate in three batches.
3. Add mousse to cauldrons – Add mousse to mini cauldrons and refrigerate uncovered for 1 hour.
4. Make buttercream – While mousse firms in the refrigerator, make buttercream. Using a stand mixer fitted with a paddle attachment, cream butter until light and fluffy. Add confectioner’s sugar bit by bit until fully combined. Add vanilla extract and a pinch of salt. Add 1 tablespoon cream or milk. If it seems too thick, you may add anothe rtablespoon of milk or cream. If it seems runny, you may add more confectioner’s sugar.
5. Tint frosting – Add purple food coloring to frosting. Beat until thoroughly combined. Add frosting to a piping bag fitted with a star tip.
6. Assemble desserts – Pipe purple buttercream onto the surface of the mousse. Create a swirly texture. Dot the buttercream with white sugar pearls.
