Trick-or-Treat! Make these adorable Mickey candy corn cupcakes with a surprise in the center – buttercream and candy corn filling!
Mickey Candy Corn Cupcakes
Makes 12 Cupcakes
Ingredients
- 12 Cupcakes
- 1 cup (2 sticks) unsalted butter, softened to room temperature
- 16 oz. confectioner’s sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- 1-2 tablespoons milk or cream
- Orange and yellow food coloring
- Candy corn
- Mini oreo cookies
Instructions
- Make frosting – Cream butter in the bowl of a stand mixer fitted with a paddle attachment or in a medium bowl using a hand mixer. When light and fluffy, add confectioner’s sugar bit by bit until fully combined. Add vanilla extract and a pinch of salt. Add 1 tablespoon cream or milk. If it seems too thick, you may add another tablespoon of milk or cream. If it seems runny, you may add more confectioner’s sugar.
2. Tint frosting – Divide the frosting into three bowls. Add orange food coloring to one bowl and combine thoroughly. Add yellow to another bowl and combine thoroughly. Leave one bowl white. Using three separate piping bags, add one color to a each piping bag fitted with a round tips. Twist tops closed and set aside.
3. Assemble cupcakes – Using a sharp pointed knife, cut a divit out of the center of each cupcake. Fill each cupcake with white buttercream and one candy corn. To create a layered frosting top to resemble a candy corn, add a layer of orange frosting to the surface of the cupcake. Then add a layer of yellow frosting on top of the orange taking care to not go all the way to the edge of the orange frosting. Finally, add a layer of white frosting and create a point at the top. Top each cupcake with two mini Oreo cookies for Mickey’s ears.
