Tropical Fruit Salad
Makes 4 servings
Ingredients:
- 1 cup kiwi, peeled and cubed
- 1 cup pineapple, peeled and cubed
- 1 cup mango, peeled and cubed
- 1 cup strawberries, trimmed
- ½ cup orange juice
- 1 tablespoon lime juice
- 2 tablespoons honey
- 1 star fruit, sliced
- Coconut flakes, optional
- 2 whole coconuts, split in halves
Instructions:
- Place kiwi, pineapple, mango and strawberries in a medium bowl. Set aside.
Combine orange juice, lime juice, and honey in a bowl; mix well. Pour dressing over fruit; gently toss to coat.
To serve, scoop salad into coconut bowls. Just before serving, garnish with star fruit and sprinkle with coconut flakes if desired.
