Chocolate Dipped Bone Cookies
Makes 2 dozen cookies
COOKIE INGREDIENTS
- 1 cup (2 sticks butter), room temperature
- 1 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 tablespoon cream or milk
- 3 cups flour
- 3 teaspoons baking powder
DECORATION INGREDIENTS
- 8 ounces semi-sweet or dark chocolate, finely chopped
(or chocolate melting wafers) - Kosher salt or flaky sea salt, for sprinkling
INSTRUCTIONS
- Make cookie batter – In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and sugar. Add eggs, vanilla extract and milk or cream. Cream well. Sift all-purpose flour and baking powder. Add to the creamed mixture. Shape mixture into a flat disk and wrap in plastic wrap. Place in the refrigerator and chill for 1 hour.
2. Bake cookies – Preheat the oven to 400 degrees. Prepare a baking sheet with parchment paper. Remove dough from refrigerator, unwrap, and place on a floured surface. Roll to ½ inch thickness and cut out shapes. Place cookies on a prepared baking sheet 3 inches apart. Bake for 8-10 minutes or until lightly browned.
3. Prepare the chocolate – Place the chopped chocolate in a microwave-safe bowl. Heat in 20–30 second intervals, stirring between each, until fully melted and smooth.
4. Dip the cookie ends – Hold a cooled bone-shaped cookie by the center and dip one end into the melted chocolate, coating about 1–1½ inches. Allow excess chocolate to drip back into the bowl before placing the cookie onto a parchment-lined baking sheet. Repeat with the opposite end. While the chocolate is still wet, lightly sprinkle the dipped ends with kosher salt or flaky sea salt.
5. Set the chocolate – Allow the cookies to sit at room temperature until the chocolate is fully set, about 30–45 minutes.
