The giant Mickey sugar cookie with dipped ears is a classic. These delicious treats require just a few ingredients and are easy to recreate at home. As a variation these can also be dipped in white chocolate and sprinkled with rainbow jimmies.
Mickey Sugar Cookies
Makes 1 dozen 4-5″ cookies or 2 dozen regular size cookies
COOKIE INGREDIENTS
- 1 cup (2 sticks butter), room temperature
- 1 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 tablespoon cream or milk
- 3 cups flour
- 3 teaspoons baking powder
- Chocolate chips
COOKIE INSTRUCTIONS
- Make cookie batter – In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and sugar. Add eggs, vanilla extract and milk or cream. Cream well. Sift all-purpose flour and baking powder. Add to the creamed mixture. Shape mixture into a flat disk and wrap in plastic wrap. Place in the refrigerator and chill for 1 hour.
2. Bake cookies – Preheat the oven to 375 degrees. Prepare a baking sheet with parchment paper. Remove dough from refrigerator, unwrap, and place on a floured surface. Roll to ½ inch thickness and cut out shapes. Place cookies on a prepared baking sheet 3 inches apart. Bake for 8-10 minutes or until lightly browned.
3. Decorate – Place waxed paper on your work surface. After cookies are completely cooled, place chocolate chips in a shallow microwave-safe bowl. Melt chocolate chips by warming in the microwave for 30-seconds at a time stirring between warming intervals. Do not over cook. Dip ears into melted chocolate. Place on waxed paper and allow to dry. Once all cookies are dipped, place remaining melted chocolate in a sandwich bag to create a piping bag. Snip off end and drizzle chocolate over the cookies.
