This Mickey fruit pizza is such a treat! Sugar cookie dough is topped with cream cheese frosting and luscious fresh berries. It’s the perfect summer dessert and is oh so good!
Mickey Fruit Pizza
Makes one 12-14-inch fruit pizza
COOKIE CRUST INGREDIENTS
- 1 cup (2 sticks) butter, softened to room temperature
- 1 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 tablespoon cream or milk
- 3 cups flour
- 3 teaspoons baking powder
FROSTING INGREDIENTS
- 8 ounces cream cheese, softened to room temperature
- 1/2 cup (1 stick) butter, softened to room temperature
- 1 teaspoon vanilla
- 1 cup confectioner’s sugar
TOPPING INGREDIENTS
- 2 cups strawberries, cleaned and sliced
- 1 cup blueberries
COOKIE INSTRUCTIONS
- Make cookie batter – In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and sugar. Add eggs, vanilla extract and milk or cream. Cream well. Sift all-purpose flour and baking powder. Add to the creamed mixture. Shape mixture into a flat disk and wrap in plastic wrap. Place in the refrigerator and chill for 1 hour.
3. Make Frosting – Combine softened butter and cream cheese in a medium bowl and beat until fluffy with an electric mixer. Add vanilla and beat until combined. Add confectioner’s sugar and mix until creamy.
4. Top pizza – Spread frosting over the surface of the cookie crust. Arrange fruit to your liking. We like to begin around the exterior border and work our way inside.
