These miniature Haunted Mansion inspired wedding cakes are nothing short of decadent! Your guests will love the candy hatchet and red gel icing details. These mini cakes were featured on our Haunted Mansion dinner party.
Haunted mansion Wedding Cake
Makes four 3-inch cakes
Ingredients
- 8 red velvet cupcakes
- 1 16-oz. container of white frosting
- Light blue food coloring
- Candy pearl decorations
- Red decorating gel
- Wilton assorted knife and cleaver candy decorations
Instructions
- Prepare cakes – Trim the rounded top off your cupcakes using a serrated knife. Next, using a set of biscuit cutters, cut four of your cupcakes into 3” rounds and the remaining four cupcakes into 2” rounds. Arrange cake rounds on a wire cooling rack that is set atop a baking sheet. Spread a thick layer of white frosting on top of the large rounds and top with small rounds. Set aside.
2. Frost Cakes – Transfer half a container of white frosting to a microwave proof bowl. Microwave on high for 1-2 minutes until melted. Once the frosting is liquified, carefully pour a coating of frosting over the cakes. You want to coat them completely so you may need 2-3 coats. Set aside and allow to harden.
Once the frosting is completely hardened, use the second package of frosting to add one final coat of white frosting to the cakes. Using a frosting spreading knife, square off the top of the cakes and smooth the sides.
3. Decorate Cakes – Decorate the cakes by adding candy pearls to the seam between the two layers of cake. Color a small amount of remaining frosting light blue. Add to a piping bag with a tiny star tip and add blue flowers to the bottom layer of each cake. Finally, use a squirt of red gel to the top and add a candy hatchet.
