“Welcome, foolish mortals, to the Haunted Mansion. I am your host, your ghost host.”
This blackberry goat cheese salad is delightfully fresh and flavorful. It’s brimming with plump blackberries, sweet spinach, tangy goat cheese, and savory puff pastry ghosts. This recipe was featured on our Liberty Square Disney dinner, but would be perfect for a Haunted Mansion dinner too.
Blackberry Blue Cheese Salad
Serves 4
Ingredients:
- 1/2 puff pastry sheet, thawed
- 1 egg beaten
- 1 tablespoon cold water
- Coarse sea salt
- 1 shallot, minced
- 3 Tbsp Balsamic vinegar
- 1 Tbsp Dijon mustard
- 2 Tbsp honey
- ½ cup olive oil
- 1 Tbsp lemon juice
- Salt & pepper to taste
- 6 c fresh spinach
- 1 c blackberries
- 2 ounces goat cheese, crumbled
Instructions:
1. Make ghosts – Place the puff pastry sheet on a lightly floured surface and roll out slightly. Cut out ghosts using a cookie cutter. Place ghosts on a parchment lined baking sheet. In a small bowl, whisk together the egg and water. Brush a bit of the egg wash onto each ghost and sprinkle with coarse salt. Preheat the oven to 425ºF. Bake for around 10 minutes or until the ghosts are puffed up and golden.
2. Make Dressing – In a small bowl or a jar add olive oil, lemon juice, shallot, vinegar, honey, mustard, salt and pepper. Whisk together or shake up to mix together.
3. Assemble Salad – In a large bowl combine spinach and berries. Gently toss with dressing to coat thoroughly. Crumble goat cheese on top and arrange ghosts over salad.
