Dragon fruit, also called Pitaya, is widely cultivated in Southeast Asia and is readily available at Asian markets and supermarkets. It comes in white, magenta, and red varieties.
We featured these delicious dragon fruit salads on our Raya & the Last Dragon dinner. We loved adding this dish to our menu – it’s so easy to create and beautiful to serve.
Dragon Fruit Salad
Makes 4 Individual Dragon Fruit Salads
Ingredients
- 2 dragon fruits
- 1 cup mango, cubed
- 1 cup kiwi, cubed
- 1 cup watermelon, round balls or cubes
- 1 star fruit, sliced (optional)
- 1 cup papaya, cubed (optional)
- ½ cup blueberries
Instructions
- To make the four salad bowls, cut two dragon fruits in half and hollow out the inside reserving the flesh.
Add fruit cubes and balls to the bowls and sprinkle with blueberries if you wish.
Serve and enjoy! You may choose to garnish with a tropical leaf and/or flower.
