These miniature Haunted Mansion inspired wedding cakes are nothing short of decadent! Your guests will love the candy hatchet and red gel icing details. These mini cakes were featured on our Haunted Mansion dinner party.
Haunted mansion Wedding Cake
Makes four 3-inch cakes
Ingredients
- 8 slices red velvet loaf cake, cut into 2″ thick slices
- 16 oz. container vanilla frosting
- 32 oz. white fondant
- Wilton sky blue food coloring
- Candy pearl decorations
- Red gel pen
- Hatchet candy decorations
Instructions
- Prepare Cakes – Using a set of round cutters, cut four of your cake slices into 3” rounds and the remaining four cake slices into 2” rounds.
2. Frost Cakes – Spread a thin layer of white frosting on tops and sides of cake rounds. Make sure the surface is as smooth as possible, as any imperfections will show through the fondant. Chill the cakes while you prepare the fondant.
3. Decorate Cakes – Knead the fondant until it’s soft and pliable. Lightly dust your work surface and rolling pin with confectioner’s sugar to prevent sticking. Roll out the fondant and cut it into rounds that will cover your cake – a 9″ circle for the bottom layer and an 8″ circle for the top layer should do it. The fondant should be ⅛” to ¼” thick. Work on each cake layer one at a time, covering fondant with plastic wrap in between layers to ensure it doesn’t dry out.
Carefully lift the fondant and drape it over the cake. Gently smooth the top of the cake first, then work your way down the sides, smoothing as you go to avoid air bubbles and wrinkles.
