Football sandwich cookies
Makes 12 sandwich cookies
Ingredients
- 12 Little Debbie Oatmeal Cream Pies
- ½ cup (1 stick) unsalted butter, softened to room temperature
- 2–2½ cups confectioners’ sugar
- ½ teaspoon pure vanilla extract
- Pinch of salt
- ½–1 tablespoon heavy cream or milk
Directions
- Make the buttercream: In a medium bowl, beat the butter using a stand mixer fitted with a paddle attachment or a hand mixer until light and fluffy. Gradually add the confectioners’ sugar and salt, mixing until smooth and fully combined. Add the vanilla and ½ tablespoon of cream or milk, then beat until creamy. Adjust consistency as needed with additional cream (to thin) or confectioners’ sugar (to thicken).
- Cut the cookies: Using a small football-shaped cookie cutter, cut a football shape from each oatmeal cream pie. Press straight down and remove excess edges carefully.
- Decorate: Transfer the buttercream to a piping bag fitted with a small round tip. Pipe football laces and stitching onto the top of each cookie. Serve immediately or chill briefly to set the buttercream.
Tips for success
Work gently: Oatmeal cream pies are soft—use a firm but careful hand when cutting to keep clean edges.
Party prep: These can be made a few hours ahead and stored in the refrigerator until serving.
