These chicken and vegetable kabobs over couscous with tzatziki are a vibrant, Middle Eastern-inspired main course perfect for entertaining. Featuring marinated grilled chicken skewers served over lemony couscous and finished with creamy tzatziki, this recipe balances warm spices, bright citrus, and fresh herbs.
Chicken kabobs are a classic Mediterranean-style grilled dish made by marinating cubed chicken, threading it onto skewers with vegetables, and grilling until lightly charred and juicy. They’re part of my Aladdin Disney Dinner Party — see the full themed menu and tablescape here.
Whether you’re planning a themed dinner party, summer gathering, or elevated movie night, this recipe walks you through how to create flavorful grilled chicken kabobs that feel impressive but are simple to prepare.
Why This Recipe Works
This recipe works because it layers flavor and texture thoughtfully. The marinade combines smoked paprika, oregano, cinnamon, and cardamom for warmth, balanced by lemon juice and olive oil for brightness.
Grilling creates caramelized edges on the chicken and vegetables, while the couscous adds a fluffy, lightly sweet contrast from golden raisins and toasted pistachios. The tzatziki provides cool creaminess, tying everything together.
Ingredient Notes
Boneless skinless chicken breasts are cut into uniform cubes for even cooking. Marinating for at least 30 minutes allows the spices to fully penetrate the meat.
Smoked paprika and cardamom give depth without overwhelming heat. Fresh lemon juice brightens both the marinade and the couscous.
Toasted pistachios add texture and richness. If preferred, substitute pine nuts or slivered almonds.
Couscous absorbs flavor beautifully and can be served warm or at room temperature, making it ideal for entertaining.
HOW TO MAKE CHICKEN AND VEGETABLE KABOBS
Serves 4
Ingredients
For the Kabobs:
2 boneless skinless chicken breasts, cut into 1-inch cubes
1 red onion, cut into large wedges
1 yellow bell pepper, cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
For the Marinade:
2 teaspoons smoked paprika
1 teaspoon dried oregano
½ teaspoon ground cinnamon
¼ teaspoon ground cardamom
1 teaspoon kosher salt
3 garlic cloves, minced
Juice of 1 lemon
½ cup extra virgin olive oil
Tzatziki Sauce for Serving
For the Couscous:
¼ cup chopped pistachios
2 tablespoons unsalted butter
1 small shallot, finely chopped
2 cups chicken broth
1 cup couscous
⅓ cup golden raisins
¼ cup chopped fresh parsley
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
¼ teaspoon ground cumin
Salt and pepper, to taste
Instructions
- Marinate the Chicken: In a medium bowl, combine paprika, oregano, cinnamon, cardamom, salt, garlic, lemon juice, and olive oil. Add the chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours) to allow the flavors to meld.
- Make the Couscous: Preheat oven to 350°F. Spread pistachios in a single layer on a baking sheet and toast for 5–7 minutes until lightly golden and fragrant. Remove and set aside.
- In a medium saucepan, melt butter over medium heat. Add shallots and cook 2–3 minutes until softened. Stir in cumin, salt, and pepper, and cook for 30 seconds until fragrant.
- Add chicken broth and bring to a boil. Remove from heat, stir in couscous, cover, and let sit for 10 minutes. Fluff couscous with a fork, then stir in golden raisins, parsley, lemon juice, olive oil, and toasted pistachios. Adjust seasoning as needed. Cover to keep warm as you make the kabobs.
- Assemble and Grill the Kabobs: Preheat your grill to medium-high heat. Thread chicken, onion, and bell pepper pieces onto skewers, alternating vegetables and chicken. Grill kabobs for 10–12 minutes, turning occasionally, until chicken is cooked through and vegetables are slightly charred. Serve over couscous with tzatziki sauce on the side.
Tips for Success
- Marinate overnight for deeper flavor if time allows.
- Cut chicken and vegetables into uniform pieces for even grilling.
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Couscous can be made ahead and served at room temperature.
- Add tzatziki just before serving to maintain texture.
