Our recipe uses whipped egg whites which gives the waffles a perfectly light and fluffy texture. These can be topped with fresh berries, whipped cream, syrup, or your favorite toppings. They’re also fun to dress up for holidays.
Fluffy Mickey Waffles
Makes about 8 Mickey waffles
Ingredients:
- 1 ¾ cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- ¼ teaspoon salt
- 1 ¾ cups milk
- 2 eggs, separated
- 2 tablespoons vegetable oil
Instructions:
- Mix batter – Combine flour, sugar, baking powder, and salt in a large bowl. Whisk milk, egg yolks, and oil in a medium bowl. Whisk milk mixture into dry ingredients until dry ingredients are moistened. Do not overmix.
2. Whisk egg whites – Using a stand mixer fitted with a whisk attachment, beat egg whites on medium-high speed until stiff. Fold egg whites into batter.
3. Bake waffles – Preheat waffle maker. Pour ½ cup of batter into a Mickey waffle iron. Spread carefully. Close the top of the waffle maker and bake until golden, about 3 minutes. Serve with maple syrup, whipped cream, and fresh fruit.
